Sautéed Cabbage with Chicken Apple Sausages

Serves 2 to 4

Ingredients

2 tablespoons olive oil

4 precooked Chicken Apple Sausages

1 small sweet onion, thinly sliced

1 small fennel bulb, thinly sliced

½ head medium green cabbage, thinly sliced

1 teaspoon sugar

1 tablespoon apple cider vinegar

Salt and pepper to taste

Directions

In a skillet, heat 1 tablespoon olive oil over medium high heat until it sizzles when water is flicked over it. Add sausages and brown on all sides.  Remove from pan.

Add the onions, and fennel to the juices in the pan. Sautée until onions are soft and translucent, stirring occasionally.

In a medium bowl combine cabbage and sugar, toss to distribute sugar.

Add 1 tablespoon of oil to the pan, then add the cabbage and sauté, stirring occasionally until cabbage is crisp tender and the edges caramelize—8 to 10 minutes.

When cabbage is done stir in apple cider vinegar, scraping the bits from bottom of the pan.  Season with salt and pepper.

Slice the sausages into ¼” rounds and add back to the pan. 

Serve warm.
