Baked Salmon with Fresh Avocado Salad

Ingredients

2 skin-on salmon fillets (6 to 8 oz. each)

2 tablespoons avocado oil

1 tablespoon lime juice

1 clove garlic, minced

½ jalapeno pepper, seeds removed, then diced

½ teaspoon ground cumin

¼ teaspoon salt

Directions

Preheat oven to 450 degrees.  Mix oil, lime juice, ground cumin, jalapeno, and salt.  Cut salmon into two steaks and pat dry on all sides.

Marinate salmon for 15 to 20 minutes at room temperature.

Cover baking sheet with aluminum foil.  Place salmon steaks skin side down on the pan, brush with remaining marinade then bake until the internal temperature reaches 140 degrees (approx. 10 to 15 minutes depending on the thickness of the salmon).

Remove from oven.

Serve topped with Fresh Avocado Salad.

 

Fresh Avocado Salad

Ingredients

1 ripe avocado, diced

1 tablespoon jalapeno pepper, minced

¼ cup fresh cilantro leaves, rough chopped

Lime wedges

Directions

Mix avocado, jalapeno, and cilantro in a small bowl.

Spoon it over cooked salmon.

Squeeze fresh lime over the top.
