Sausage Burrito Frittata

Ingredients

3 tablespoons olive oil

½ cup onions

1 clove garlic, minced

1 jalapeno pepper, minced

1 baked potato, cooled, peeled, and shredded (1 ½ to 2 cups)

Cooked, crumbled breakfast sausage, 1 cup

Green pepper, ½ cup chopped

8 eggs, lightly beaten

½ cup milk

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon pepper

1 cup cheddar cheese, shredded

Hot sauce

 

Directions

Preheat oven to 350 degrees. In a 10” cast iron pan or other oven safe skillet, add oil, onions, garlic, and jalapeno and sweat over low heat for 3 to 5 minutes or until the onion softens.

Add in potato, sausage, and green pepper, turn heat to medium and cook a few minutes more until ingredients are warmed through.

Meanwhile, gently mix eggs, milk, salt, pepper, and cumin in a bowl and pour over the top.  Let cook for 2 minutes, then top with cheese.

Cook on the stove top over medium low heat for 3 to 5 minutes more, until you see the edges begin to set and pull slightly form the pan.

Put skillet into the oven and bake for 15 to 17 minutes or until eggs are set and frittata cooked through.

Garnish with sour cream and your favorite hot sauce (optional).

Serve hot or cold.
