Fiesta Chili

Makes 6 servings

Ingredients

1 lb. grass fed ground beef

1 yellow onion, diced

2 cloves garlic, minced

1 jalapeno pepper, ribs and seeds removed, then diced

1 green pepper, ribs and seeds removed, then diced

2 tablespoons fiesta chili powder

1 teaspoon cumin

1 teaspoon dried oregano

Salt to taste

1 can diced tomatoes (28 oz)

1 can black beans, drained and rinsed

1 cup frozen corn

1 cup of water

2 teaspoons lime juice

Directions

In a Dutch oven, brown ground beef then drain the excess fat leaving about a tablespoon in the pan.  Add onion and cook for 5 minutes, stirring occasionally.  Add garlic, cook for 2 minutes more. Then add peppers, chili powder, cumin, oregano, and salt.  Toast spices over high heat for 2 to 3 minutes, stirring constantly.  Then add tomatoes, beans, corn, and water.  Bring to just a boil, then reduce heat to simmer and cover. Cook for at least an hour, stirring occasionally.  Stir in lime juice before serving.

Serve in bowls garnished with sour cream, Monterey jack cheese, cilantro, lime slices, and/or tortilla chips.
