Ingredients

1 # your favorite sausage links (cooked using package directions, then sliced into rounds)

1 pkg. flour tortillas (we use Stacey’s Organic)

Pepper and Onion Ingredients

½ tablespoon butter

1 medium sweet onion, sliced

2 cups mini peppers, sliced into rounds

1 teaspoon cumin

Salt and pepper

Egg Ingredients

1 tablespoon butter

1 dozen large eggs

1 tablespoon half and half

Salt and pepper

Optional Ingredients

Shredded cheese

Fresh diced tomatoes

Diced avocado

Fresh cilantro

Hot sauce

Sour cream

Directions

Heat the oven to 200 degrees.  Wrap tortillas in foil to warm. As each part of your meal is made- transfer to the oven to keep warm until you are ready to serve.

In a skillet, sauté peppers and onions in butter with cumin, salt and pepper until onions are soft and translucent and edges of peppers begin to caramelize.

With a fork or whisk, beat eggs, half and half, salt, and pepper, until yolks are all broken and just mixed. Melt butter in a saucepan and swirl to coat all surfaces.  Over medium high heat, add egg mixture to the pan and cook until edges begin to pull from the side of the pan.  With a rubber spatula, gently scrape the sides and the bottom of the pan and fold the egg over. Let cook a bit without stirring then repeat, scraping the sides and the bottom.  If the eggs start to stick to the bottom of the pan- remove from the heat for a few seconds while stirring.  Continue this process until egg is cooked through.

When you are ready to serve, put out eggs, peppers and onions, tortillas, and sausage bits, plus your choice of garnish.
