Cinnamon Vanilla Rice Pudding

Makes 4-6 servings

Ingredients

2 1/2 cups, Oat milk

1 cup rice (Jasmine)

4 tbsp brown sugar

3/4 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg, freshly grated

1 tsp vanilla

3/4 cups raisins

Directions

In a medium saucepan, bring 2 cups of oat milk to boil. Stir in rice, brown sugar, salt, cinnamon, and nutmeg. Bring to a a boil. Reduce heat, cover and simmer for about 15 minutes - diligently checking and stirring so rice mixture doesn’t stick.

Add in remaining oat milk. Cover and simmer another 10 minutes. Add in raisins and simmer another 5 minutes.

Remove from heat and stir in vanilla.

Note: Different rice varieties may take more/less time and require more/less milk.
