White Bean Hummus

Ingredients

1 garlic clove

1 (15-ounce) can white cannellini beans, rinsed and drained

¼ cup tahini

6 tablespoons fresh lemon juice

2 teaspoons coriander seeds, coarsely ground, or 1 1/2 teaspoons ground coriander

1 teaspoon Kosher salt

Pinch of paprika (optional)

¼ cup extra-virgin olive oil

Directions

Pulse garlic in a food processor or high-speed blender until minced. Give the bowl a scrape and add the beans, tahini, lemon juice, coriander, salt and pinch of paprika. Pulse until smooth, stopping to scrape the bowl. With the machine running, add the olive oil. Season to taste with salt.

Note: If hummus is too thick, add a teaspoon of water until you get the desired consistency.
