Brussels Sprout and Cranberry Salad

Ingredients

2 lbs of brussels sprouts, shredded

6 strips of bacon, cooked, diced

1/4 small red onion, diced

1/2 cup of organic dried cranberries

1/4 cup of pumpkin seeds or sunflower seeds

3 tbsp Dijon mustard

3 tbsp maple syrup

2 tsp of apple cider vinegar

1 tsp salt

1 tsp pepper

1 1/2 cups of olive oil

Directions

Combine brussels sprouts, red onion, cranberries, and bacon.

Whisk together Dijon mustard, maple syrup, apple cider vinegar, salt, pepper, and olive oil.

Pour dressing over salad mixture an stir to combine.

Add in seeds.

Refrigerate for 1-2 hours before serving
