Dutch Baby Pancake

Ingredients

3 eggs

1/2 cup flour

1/2 cup milk

1 tablespoon sugar

Pinch of nutmeg

3 tablespoons butter

Cinnamon and sugar topping:

1/4 cup cane sugar

1 tablespoon cinnamon

 

Directions

Preheat oven to 425 degrees.

Combine eggs, flour, milk, sugar, and nutmeg and blend until smooth.

Place cast iron pan with 3 tablespoons of butter in the oven until butter is almost melted (1 to 2 minutes). Swirl butter around the pan to coat. Make sure to get the sides of the pan.

Pour batter into the pan and bake for 20 minutes. Turn heat off and let sit in the oven for five more minutes.

Remove from the oven and top with butter and syrup, fresh fruit or butter and cinnamon and sugar topping.

Cut into triangles and serve immediately.
