Gorgonzola Pear Salad

Makes 2 salads

Ingredients

Toasted Pecans

1 tsp maple syrup

¼ cup pecan pieces

Pinch of salt

Combine ingredients and stir to coat.  Cook in 350-degree oven for 5 to 8 minutes or until pecans are toasted and fragrant.  Be careful not to burn.

Balsamic Dressing

2 tablespoons balsamic vinegar

1 teaspoon honey

1 tablespoon minced shallot

¼ cup extra virgin olive oil

Salt and pepper

Mix vinegar, honey, and shallot together then slowly stream in olive oil.  Season with salt and pepper.

The salad

4 cups mixed greens

Balsamic dressing

1 pear, cored and thinly sliced

¼ cup dried tart cherries

¼ cup toasted pecans

¼ cup Gorgonzola cheese

Directions

Mix greens in about half of the dressing.  Divide on to two plates.

Artfully arrange the rest of the ingredients on top.

Taste and add more dressing if desired.
