Grass-Fed Steak and Bleu Salad

Salad Ingredients

serves 2

1 Grass Fed Sirloin Tip Steak, seasoned with salt and pepper, cooked to your liking

1 small red onion, sliced into rings

2 oz. Revol Romaine Salad Mix (you can use other salad mix – but this one is extra crunchy)

2 oz. baby spinach

2 oz. Bleu Cheese, Roquefort, or Gorgonzola

Homemade Bleu Cheese Dressing (recipe below)

Directions

Let steak rest, then cut it into strips.  Lightly grill or sauté red onions (optional). Mix salad and spinach together in a bowl, then divide between two plates.  Layer steak, and onions over salad mix.  Crumble blue cheese on top.  Then top with Bleu Cheese Dressing. Season with fresh cracked pepper.

Homemade Bleu Cheese Dressing

Ingredients

¼ cup sour cream

¼ cup mayonnaise

2 oz. bleu, gorgonzola, or Roquefort cheese, crumbled

1 tablespoon fresh parsley, minced

1 tablespoon fresh lemon juice

2 tablespoons milk

Kosher salt and fresh ground pepper to taste

Directions

Combine sour cream, mayonnaise, and cheese in a bowl.  Stir to combine, breaking up cheese a bit as you stir.  Stir in parsley, lemon juice, and milk until well combined.  Season with salt and pepper.  Refrigerate for at least an hour to allow flavors to meld.  Stir and serve.
