Honey Garlic Shrimp and Broccoli Stir Fry

Ingredients

1 # large shrimp peeled and deveined

2 Tablespoons oil (we like Driftless Sunflower Oil)

2 cups broccoli florets

1 cup mushrooms, sliced

1 cup red, yellow, and/or orange peppers julienned

4 cloves garlic, minced

1” fresh ginger, peeled and minced

¼ cup water

3 Tbsps. honey

¼ cup soy sauce

1 Tablespoon toasted sesame oil

1 teaspoon red chili pepper flakes

3 Tbsp. honey

2 teaspoons cornstarch

Salt and pepper


Directions

Rinse shrimp and pat dry. Season with salt and pepper. Leave spread out on a paper towel.

In a large pan, heat half of the oil on medium high heat. Add broccoli, cook 2 to 3 minutes, then add mushrooms and peppers, cook 3 minutes more, remove from pan and set aside.

In the same pan, heat the rest of the oil. Next add shrimp to the pan. Cook 3 to 4 minutes., turning towards the end.

Add the ginger and garlic. Cook 30 more seconds.

Add vegetables back to the pan.

Whisk together water, honey, ginger, sesame oil, soy and red chili flakes. Add to the pan. Cook 1 minute.
Dissolve cornstarch in 1 Tablespoon cold water. Then add to the pan. Bring to a boil to thicken, stirring frequently 1 to 3 minutes.
