Kale and Sun-dried Tomato Pesto

makes about 2 cups

3 garlic cloves

1 bunch of kale

1/3 cup, sundried tomatoes (not in oil)

1/2 lemon, juiced (more to taste)

½ cup walnuts

3 tbsp Parmesan, grated (optional)

½ tsp red pepper

½ tsp salt

½ tsp pepper

Optional: 1 tbsp of water 

To a high-speed blender, add all the ingredients. Blend until mixture starts to come together. If needed, add a little water or extra olive oil.
