Kale, Apple, and Smoked Gouda Salad with a Maple Dijon Dressing

makes 4-6 servings

Ingredients

2 tsp of apple cider vinegar

2 tbsp of local maple syrup

2 tbsp of Dijon mustard

1/2 cup of olive oil

1 tsp black pepper

1/2 tsp of salt

1 large bunch of lacinato kale

handful of pea shoots (or other microgreens)

1 Honeycrisp apple, chopped, or more if preferred

3 oz smoked Gouda, 1/4” pieces

handful of pepitas

Directions

For the dressing: In a small bowl, whisk together the mustard, maple syrup, apple cider vinegar, olive oil, salt and pepper. Set aside.

Assemble the salad in a large bowl. Add dressing right before serving.
