Marinated Mozzarella Balls with Fresh Cherry Tomatoes

Ingredients

8 oz. mozzarella balls

¼ cup olive oil

2 tablespoons fresh chopped herbs (basil, rosemary, oregano, thyme)

1 clove garlic, minced

Salt to taste

1-pint cherry tomatoes, halved

1 teaspoon aged balsamic vinegar

Directions

Combine mozzarella, olive oil, herbs, garlic, and a pinch of salt in a shallow dish or bowl.  Stir until mozzarella is evenly coated with oil.  Refrigerate for at least an hour. 

In another bowl combine cherry tomatoes and balsamic.  Stir to combine.

Combine marinated mozzarella balls and tomatoes.

Stir and serve.
