Tomato and Basil Bruschetta

Bread

8 small pieces of Co-op’s Own Artisan Sourdough Bread

1 clove garlic, minced

2 tablespoons extra virgin olive oil

¼ teaspoon dried basil

Pinch of salt

Preheat oven to 400 degrees.

Mix olive oil, garlic, dried basil, and salt. Brush oil on both sides of the bread. Put on baking sheet and toast in the oven for 8 minutes or until very slightly browned. Take out and let cool.

Topping Mix:

1 tablespoon red onion, diced

1 cup cherry tomatoes

½ teaspoon aged balsamic vinegar

Handful of fresh basil (5 to 6 leaves), thinly sliced

2 tablespoons shredded parmesan

Mix above ingredients. Spoon on to toasts. Serve.
