Peanut Butter and Chocolate Oat Bars

Ingredients

1 cup dark chocolate, chocolate chips

3/4 cup creamy peanut butter

1/2 cup butter, melted

1/3 cup brown sugar

1 teaspoon cinnamon

½ teaspoon sea salt

1 teaspoon vanilla extract

2 cups rolled oats

1 cup shredded coconut

Directions

Melt chocolate chips and peanut butter in the microwave – heat for 30 seconds, then stir. Heat for 30 more seconds, stir until all chunks are dissolved, then set aside.

Next, melt butter in a medium saucepan. Then add brown sugar and sea salt. Stir until brown sugar is dissolved. Then add vanilla, cinnamon, and coconut. Stir until combined, then stir in oats.

Press 3/4 of the oat layer in the bottom of an 8 x 8 pan. Top with chocolate and peanut butter mixture. Then crumble the remaining oat mixture over the top. Scrape the sides of the chocolate pan and drizzle chocolate over the top.

Refrigerate for 2 hours. Remove from the refrigerator and let sit at room temperature for 10 minutes, then cut into 1 x 1 inch squares. Keep bars refrigerated. Serve after being allowed to sit at room temperature for 5 to 10 minutes.
