Pear Custard Skillet final.jpg

Ingredients

3 firm pears, cored and thinly sliced

¼ cup butter, melted plus a little butter to grease the pan

¾ cups milk

3 eggs

2 teaspoons vanilla

1/3 cup sugar

1/3 cup flour

¼ teaspoon kosher salt

¼ teaspoon cardamom

½ teaspoon cinnamon

Powder sugar

Directions

Preheat oven to 350 degrees.

Melt butter and set aside to slightly cool.

Lightly butter a 10” cast iron skillet.

Arrange pear slices in a single layer on the bottom of the skillet, overlapping if necessary.

Mix milk, eggs, and vanilla with an immersion blender 2 to 3 minutes until eggs are foamy.

In a small bowl combine sugar, flour, kosher salt, cardamom, and cinnamon, stir with a fork.

Add to egg mixture along with melted butter and mix 1 to 2 minutes more or until smooth.

Carefully pour over pears (if you pour too fast the pears will jumble).

Bake in the oven for 40 to 45 minutes or until the custard is golden and firm.

Dust the top with powdered sugar.
