Ingredients

½ cup walnuts, toasted and cooled

1 bunch sustainably harvested ramps (approx. 2 cups)

1/3 cup extra virgin olive oil

½ cup high quality parmesan cheese

Juice of ½ a lemon

Directions

In a food processor combine walnuts, ramps, olive oil, cheese, and lemon juice. Process until desired consistency.  Serve on bread, as a “sauce” for pizza, or tossed with pasta.
