Caramelized Onion, Apple, and Cheddar Quesadilla

Ingredients

1 tablespoon butter

1 medium sweet onion, peeled and thinly sliced

1 medium apple, cored and thinly sliced

2 oz. shredded white cheddar cheese, like Metz Heartland Creamery White Sharp Cheddar

2 flour tortillas

Directions

In a skillet, melt butter over medium heat.  Add onion and reduce heat. Continue to cook onions, for 15 to 20 minutes on low heat.  Stir periodically to ensure even caramelization and prevent burning. If pan becomes dry add about a tablespoon of water and stir.  Repeat if pan dries out again.  

When the onions have 5 minutes remaining, heat cast iron pan over high heat until pan is heated, add a touch of oil and swirl.   Reduce heat to medium and place tortilla on the bottom.  Next spread a layer of onions. Then a layer of apples.  Cover with shredded cheddar cheese. Then top with the remaining tortilla.  Flip tortilla when the bottom side is golden.  Cook for 5 minutes more or until other side is golden.  Remove from heat and slice into triangles to serve.
