Three Cheese Macaroni and Cheese

5 cups of dried pasta

6 tbsp of butter

6 tbsp cornstarch

3 cups of milk

5 oz of cream cheese, chopped into small pieces

3 cups of Colby cheddar

3 cups of sharp cheddar

1 cup of Parmesan cheese

1 1/2 tsp of salt

1 tsp pepper

1/2 tsp of paprika (optional)

Directions

Preheat oven to 350 degrees. Grease a 9 x 13 pan.

Cook pasta according to directions on box.

In a large skillet, melt butter. Add in cornstarch and stir until combined. Add in cream cheese and stir until melted. Pour in milk and stir until the mixture thickens. This will take several minutes.

Once the sauce has thickened, add the colby cheddar and sharp cheddar cheese. Stir until cheese has melted. Add in salt, pepper, and paprika and stir until combined.

In a large bowl, add in the cooked pasta. Pour 1/2 of the cheese sauce over the pasta. Stir until combined. Add more sauce until pasta is coated. Reserve extra sauce for reheating.

Pour macaroni mixture into 9 x 13 pan. Sprinkle Parmesan cheese on top.

Bake for 30 -35 minutes or until edges of pasta have browned.

Note: This recipe will make extra sauce. Add a little bit of sauce as you reheat the macaroni and cheese.
