Tropical Fruit Salad

Ingredients

1 ripe pineapple, skinned, cored, and cut into bite sized shapes

2 ripe kiwis, peeled and sliced into triangles

2 mandarin oranges, peeled and sections separated

2 bananas, peeled and sliced

1 tablespoon honey

Juice and zest from one lime

½ cup toasted coconut

Directions

In a medium sized bowl whisk honey, lime juice and lime zest until honey is dissolved and mixture is well blended.  Add all the fruit except the bananas.  Stir to coat. Refrigerate for at least 20 minutes. Divide onto plates.  Before serving add banana slices.  Garnish with toasted coconut.
