Spanish Rice

Ingredients

2 cups of long grain rice

Drizzle of vegetable or sunflower oil

8 oz tomato sauce

2 tsp minced garlic

4 cups of chicken or vegetable broth

1 ½ teaspoons cumin

Pinch of cayenne pepper

Salt and pepper

Cilantro, for serving (optional)

Directions

Heat oil in pan on medium. Add rice and cook until golden. Keep a close eye so the rice doesn’t get too dark. Add broth, tomato sauce, salt, garlic, cumin, and cayenne. Stir, cover, and let simmer for about 30 minutes or until the liquid is gone.

Fluff and garnish with fresh cilantro.
