Very Berry Salad with Candied Walnuts and Champagne Vinaigrette

Ingredients

4 cups of your favorite local greens

1/3 cup strawberries, sliced

1/2 cup, blueberries

1/2 kiwi, sliced

2 tbsp feta

1 recipe for candied walnuts (below)

Candied Walnut

1/2 cup walnuts, halved

1 tbsp butter, melted

1 tbsp, sugar

In a small saucepan, melt butter. Add in walnuts and stir until walnuts are covered in butter. Add in sugar. Stir until the butter has been absorbed and the sugar has dissolved onto the walnut. Place the walnuts on a lined sheet pan. Let cool for about 10 minutes.

Champagne Vinaigrette

1/2 small shallot, finely diced

1/2 cup Champagne vinegar

2 tsp, Dijon mustard

1/2 lemon, juiced

2 tsp, honey

salt and pepper to taste

1/2 cup olive oil

In a bowl, combine the shallot, Champagne vinegar, Dijon mustard, lemon, honey, salt and pepper. Whisk to combine. Drizzle in olive oil and whisk to combine.
