Build Your Own Oatmeal Breakfast Bake
Ingredients
6 cups of old fashioned oats
¾ cups, brown sugar
1 tsp, salt
2 tsp, baking powder
1 ½ tsp cinnamon
1 tsp nutmeg
2 tbsp flax powder
6 eggs
2 cups of milk (sub oat, almond or coconut)
2 tsp vanilla extract
½ cup coconut oil, melted
1 ½ cups, dried cranberries (sub raisins, dried cherries, blueberries, apricots, other dried fruit)
¾ cup pecans, chopped (sub walnuts, slivered almonds)
Directions
Preheat oven to 400 degrees. Grease a 9 x 11 baking dish
In a large bowl, combine the oats, sugar, salt, baking powder, cinnamon, nutmeg, and flax powder. In a medium bowl, whisk the eggs, milk, vanilla extract, and coconut oil. Pour the wet ingredients into the dry ingredients and stir to combin. Add in dried cranberries.
Pour into greased baking dish. Sprinkle pecans over the top. Cover with tin foil. Bake covered for 25 minutes. Remove tin foil, and bake another 20 minutes – or until the middle is cooked through.
