Ultimate Veggie Melt
Ingredients
1 tablespoon olive oil
1 tablespoon red onion, minced
1 carrot peeled and finely chopped
2 sweet peppers, finely chopped
1 pepperoncini pepper, diced
½ cup chopped cauliflower florets
6 green olives, minced
A pinch of salt
A pinch of red pepper flakes
½ cup baby spinach, rough chopped
1 tablespoon sunflower seeds
4 cherry tomatoes, diced
1 cup shredded white cheddar cheese
4 slices of bread (your choice)
2 tablespoons soft butter
Directions
Heat oil in a skillet and then add onion, carrot, peppers, cauliflower, and olives. Sauté over high heat, stirring occasionally until vegetables are crisp soft approximately 3 minutes. Add the salt, pepper flakes, spinach, and sunflower seeds and sauté 1 to 2 minutes more or until spinach begins to wilt. Remove from heat and set aside.
Butter one side of each slice of bread. Warm a non-stick pan then place two pieces of bread butter side down. Layer ¼ cup of cheese, half of the vegetable mix, and a sprinkling of fresh tomatoes, top with cheese and the remaining pieces of bread (butter side up), on each sandwich. Allow to cook until the bottom turns golden brown. Press with a spatula then flip and toast on the other side until cheese melts and the bread is crispy and golden brown.
Cut in half and serve immediately
