Blueberry Banana Bread
Ingredients
3 very ripe bananas, peeled and mashed
1/3 cup butter, melted
1 teaspoon baking soda
Pinch of salt
½ cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 ½ cups plus one teaspoon flour, divided
½ cup shredded, unsweetened coconut, toasted
¾ cups fresh blueberries
Directions
Preheat oven to 375 degrees.
In a medium bowl combine bananas and butter.
Stir in baking soda and salt.
Next add sugar, egg, and vanilla.
Stir until fully combined.
Fold in 1 ½ cups flour using a rubber spatula, do not over mix.
In a small bowl toss blueberries and remaining flour.
Fold in coconut and blueberries.
Pour into a prepared bread pan.
Bake for 40 to 50 minutes or until a toothpick inserted into the center comes out clean.
