Avocado Toast with Radish and Egg

Ingredients

Sourdough bread, toasted

½ ripe avocado, smashed

1 tablespoon butter

1 large egg

1 radish, julienned

Salt and pepper

Local microgreens

Directions

Spread avocado on the bread.

In a pan melt butter. Add radish and sauté for a few minutes until golden. Season with salt and pepper.  Remove form pan.  Then add egg and fry to desired doneness.

Put egg on top of avocado. 

Garnish with radish and microgreens.
