Breakfast Quesadilla
Ingredients
1 flour tortilla
1 large egg, scrambled (and fully cooked)
2 tablespoon shredded cheddar cheese
1 tablespoon salsa
Directions
Warm a skillet on the stove top. Fold the tortilla in half and then in half again to make four equal sections. Unfold the tortilla.
In the first section add 1 tablespoon cheddar cheese, in the next section add scrambled egg, in the third section add 1 tablespoon cheddar cheese, in the last section add salsa.
Carefully refold the tortilla in half and in half again.
Place folded tortilla on a warm skillet over medium high heat. When the bottom is crunchy and golden, flip it with a spatula to toast the other side until it is crunchy and golden. Remove from the skillet and serve.
