Cranberry Cardamom Granola

Ingredients

6 cups rolled oats

2 cups nuts (pepitas and walnuts pictured)

1 1/2 tsp salt

1 1/2 tsp, cinnamon

3/4 tsp cardamom

3/4 cup coconut oil

3/4 cup maple syrup

2 tsp vanilla

1 cup dried fruit (cranberries pictured)

optional: chocolate chips and coconut flakes

Directions

Preheat oven to 350 degrees.

In a large bowl, combine oats, nuts, salt, cinnamon, and cardamom. Stir to combine.

Add in coconut oil, syrup, and vanilla. Stir to combine.

Pour granola on to two greased baking sheets. Bake for 23 minutes. Let cool.

Add in dried fruit and any other desired ingredients.
