Creamy Parmesan Peas
Ingredients
2 cups Sno Pac Organic Frozen Peas
2 tablespoons butter
2 tablespoons yellow onion, finely chopped
1 medium carrot, peeled and minced
½ teaspoon dried thyme
¼ teaspoon kosher salt
1/8 teaspoon black pepper
1 tablespoon flour
¼ cup heavy cream
1 cup milk
½ cup shredded Parmesan cheese
Directions
In a saucepan combine peas and 2 tablespoons of water. Simmer over low heat until peas are thawed and cooked through, drain excess water if any.
In a separate pan, melt butter with onions and carrots. Cook until onions are soft and translucent, stirring occasionally over medium heat. Turn heat to high, stir in thyme, salt and pepper, and flour. Cook, stirring constantly until vegetables are coated with flour and the flour toasts a bit.
Add in whipping cream, stirring vigorously. Slowly pour in milk. Cook stirring continuously over medium high heat until milk reduces, and the sauce thickens.
Remove from heat and immediately stir in cheese. Continue to stir until cheese is melted and combined into the sauce.
Stir in peas until coated with sauce and serve.
