Sage Butter Carrots

Ingredients

2 tablespoons butter

4 medium carrots, peeled and sliced diagonally

¼ cup lightly packed fresh sage, minced

Pinch of cayenne pepper

Salt and pepper, to taste

Directions

In a saucepan, melt butter over medium high heat.  Add carrots and sage and swirl to coat.  Cook for 2 to 3 minutes.  Sprinkle with salt and pepper. 

Add 1 tablespoon water, cover pan and reduce heat to medium. Cook, covered for 8 to 10 minutes or until carrots are crisp soft.  Swirl pan occasionally to prevent sticking and burning.

Remove cover and continue to cook until carrot edges begin to brown and caramelize 3 to 4 more minutes.  Sprinkle with salt, pepper, and a pinch of cayenne (optional).

Serve warm.
