Frozen Chocolate Pie
Graham Cracker Crust
10 whole graham crackers (20 squares)
5 Tablespoons melted butter
1/3 cup cane sugar
Directions
1. Place graham crackers in a zip loc bag. Crush into fine pieces using the bottom of a glass or a rolling pin.
2. Add sugar and shake, then pour into a medium sized bowl.
3. Pour melted butter over the crumbs and stir until evenly coated.
4. Pour into a pie pan.
5. Spread evenly along the bottom and up the sides with the back of a spoon.
6. Using the bottom of a glass. Press down on the crumbs to form a crust.
Chocolate Filling
½ cup semi-sweet chocolate chips
2 Tablespoons milk
1 ¼ cups heavy whipping cream
1 teaspoon vanilla
2 Tablespoons cane sugar
4 oz Neufchatel or cream cheese
1 Tablespoon sugar
¼ cup milk
Directions
1. Melt chocolate chips and 2 Tbsp. milk for 30 seconds in a microwave. Stir and melt 20 seconds more. Remove and stir. Set aside to cool slightly.
2. In a large bowl combine heavy whipping cream, vanilla and 2 Tablespoons cane sugar.
3. Whip with a hand mixer until cream doubles in size and forms stiff peaks. Set aside.
4. Combine chocolate, Neufchatel, sugar and ¼ cup of milk in a large bowl.
5. Blend together using a hand mixer, until smooth and well combined.
6. Fold in whipping cream saving ¼ cup for garnish.
7. Spoon chocolate mixture into the graham cracker crust and freeze for 2 hours.
Take out of the freezer 5 to 10 minutes before serving. Garnish if desired, with remaining whipped cream, strawberries, and chocolate chips.
