Gluten-Free Rhubarb Muffins
makes 10 large muffins
Ingredients
1 cup oat flour
1 cup gluten-free flour
1/2 cup almond flour
2/3 cup sugar
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2 eggs
3/4 cup oat milk
1/4 cup unsweetened applesauce
2 tsp vanilla
1 1/2 cups rhubarb, 1/2 inch pieces
Directions
Preheat oven to 350 degrees.
In a large bowl, combine the flours, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir to combine.
In a medium bowl, combine the eggs, milk, applesauce, and vanilla. Whisk until combined.
Pour wet ingredients into dry ingredients and stir to combine or until a batter forms. Gently fold in the rhubarb.
Use a 1/3 measuring cup to portion out the batter between the tins.
Bake for 30 minutes.
