Green Beans and Co-op’s Own™ Spicy Sausage Skillet
Ingredients
1# Co-op’s Own™ Spicy Italian Loose Sausage
4 oz crimini or white button mushrooms, sliced
1 large Vidalia onion, sliced
1 lb. green beans, washed and trimmed
2 cloves garlic
White wine or water (as needed)
1 large tomato, cubed
1 large handful fresh basil, washed and sliced
¼ cup parmesan Reggiano
2 cups cooked pasta of your choice
Directions
In a cast iron skillet, cook sausage until browned on the outside and cooked through. Remove from pan and drain on a paper towel. Pour off all but 1 tablespoon grease.
Add mushrooms and onion to the pan. Sauté until onions become translucent. Next add garlic and continue to cook for 1 to 2 minutes over medium high heat. As the pan becomes dry add a splash of white wine or water and scrape the bottom of the pan to release any bits and to prevent burning. Stir in the cooked sausage. Next, add tomato and cook, stirring for about a minute more, then add basil.
Remove from heat and add most of the cheese, reserving some garnish.
Lightly stir to melt the cheese into the dish and immediately serve over pasta. Garnish with more cheese.
