White Chicken Lasagna
Ingredients
1 recipe basic baked chicken breasts, thinly sliced (below)
Lasagna noodles cooked el dente according to package directions.
1 recipe Mushroom Mix (below)
1 recipe White Sauce (below)
2 cups shredded mozzarella cheese, divided into thirds
Directions
Preheat oven to 350 degrees.
Spoon a scoop of sauce into a 9 x 13 pan so it evenly covers the bottom. Add your first layer of noodles.
Next, spread an even layer of chicken mixture over the noodles, followed by a scoop of sauce, finish with 1/3 of the mozzarella cheese. Next, add another layer of lasagna noodles, the remaining chicken mixture, sauce, and mozzarella. Add one more layer of noodles. Pour the remaining sauce over the top and finish with mozzarella cheese.
Bake covered 45 - 50 minutes or until the cheese is set. Remove cover and bake 10 more minutes. Let cool 10 minutes before serving.
Mushroom Mix Ingredients
2 tablespoons butter
2 cloves garlic, minced
8 oz. mushrooms, sliced
½ teaspoon dried thyme
4 cups spinach
Salt
Mushroom Mix Directions
In a saucepan over medium heat, melt butter with garlic. When butter is almost melted add mushrooms, thyme, and salt. Sauté until mushrooms begin to brown. Then add spinach and cook until spinach is wilted. Stir in chicken and set aside.
White Sauce Ingredients
2 tablespoons butter
2 tablespoons garlic, finely chopped
1 tablespoon flour
1 medium yellow onion, finely chopped
2 cups milk
1 cup whole milk ricotta cheese
1 ½ cups grated parmesan cheese
Salt and Pepper
White Sauce Directions
In a saucepan combine butter, garlic, and onions and cook on medium low heat, stirring occasionally until butter is melted and onions are soft and fragrant. Stir in flour and cook for a minute or two, stirring constantly. Turn heat to medium and add milk. Cook just until milk boils, stirring frequently. Remove from heat and stir in cheeses until melted.
