Lemon Olive Oil Cake
Ingredients
1 ½ cups all- purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¾ cup sugar
1 tablespoon lemon zest (zest from 1 large lemon)
3 large eggs
½ cup extra virgin olive oil
¼ cup butter, melted then cooled
¼ cup lemon juice
1 cup plain Greek yogurt
Directions
Preheat oven to 350 degrees.
In a medium bowl, whisk flour, baking powder, baking soda and salt. Set aside.
In a large bowl combine sugar and lemon zest. Then add eggs and whisk until well mixed. Stir in butter, lemon juice and yogurt. Mix until smooth.
Fold in flour and stir until just combined.
Pour into a buttered 9” springform pan.
Tap on counter to level.
Bake for 40 to 45 minutes.
