Mini Meatloaves
makes 8 mini meatloaves
Ingredients
1 lb, local, grass-fed ground beef
1 lb, local, Ferndale Market, ground turkey
2 garlic cloves, minced
1/3 cup, yellow onion, diced finely
1 tsp, ground mustard
Pinch of cayenne pepper
½ tsp salt
½ tsp pepper
1 ½ tbsp Worcestershire
3 tbsp, ketchup or BBQ sauce
2 local eggs, whipped
¼ cup, parsley
1 cup, bread crumbs
1/3 cup, cheddar cheese, shredded
8 tsp, BBQ sauce for topping
Additional shredded cheddar cheese for topping
Directions
Preheat oven to 350 degrees.
In a large bowl, combine the beef, turkey, garlic, onion, ground mustard, cayenne pepper, salt, pepper, Worcestershire, BBQ sauce, and bread crumbs. Using clean hands, combine mixture. Add in cheese, using your hands to once again combine the mixture.
Divide mixture into 8 muffin tins. Press meat into tins. Add 1 tsp BBQ sauce to top of meat and spread evenly. Repeat for the remaining meatloaves.
Bake for 30 minutes. Remove from oven, and sprinkle cheddar cheese on top of meatloaves. Place back in oven for an additional 3 minutes or until the cheese has melted.
