Peanut Noodle Bowl

Ingredients

8 oz noodles (udon, linguine etc.)

2 cups broccoli florets

3 ribs celery, halved and chopped

2 carrots, peeled and julienned

6 small sweet peppers, julienned

3 green onions, finely chopped


Peanut Butter Sauce

1/3 cup peanut butter

2 tablespoons honey

1/4 cup warm water

1/4 cup tamari or low sodium soy sauce

Juice of 2 limes

1 teaspoon hot pepper sauce

1 clove garlic, minced

3 tablespoons vegetable oil

Directions

Prepare noodles following directions on the package, drain and set aside.

Chop vegetables and combine.

Make sauce. Combine peanut butter, honey, and warm water. Stir until peanut butter and honey is dissolved. Next stir in tamari, lime juice, hot pepper sauce and garlic. Pour in oil in a steady stream using a whisk to stir it into the peanut sauce.

In a large bowl combine noodles and sauce and let sit for 5 minutes. Next, stir in vegetables to coat.

Serve topped with peanuts, and garnished with fresh chopped cilantro (optional).
