Sesame & Ginger Slaw
For the slaw
4 cups of shredded cabbage
1 1/4 cup of shredded carrots
1 jalapeno
1/3 cup of chopped fresh basil leaves
3 tbsp sesame seeds, reserve some for garnishing
Handful of salted peanuts (optional, but recommended) for serving
For the dressing
1/3 cup of rice vinegar
2 tbsp of local honey
1 ½ tbsp of tamari
1 tbsp toasted sesame oil
1 ½ tbsp of grated ginger
Salt and pepper
Directions
Combine the shredded cabbage, carrots, jalapeno, basil leaves and sesame seeds. Set aside. For the dressing, place all the ingredients in a large bowl and whisk to combine. Pour dressing over the slaw and toss.
Cover and refrigerate for at least 30 minutes so the flavors meld. Garnish with more basil, sesames seeds, and peanuts.
