Pumpkin Streusel Quick Bread
Ingredients
2 cups, flour
1 tsp, baking soda
1 tsp, pumpkin pie spice
1 tsp, cinnamon
½ tsp, nutmeg
½ tsp, salt
2 eggs
¾ cup, brown sugar
½ cup, sugar
3 tbsp, molasses
½ cup, coconut oil
1 tsp, vanilla
1 can of pumpkin puree (15 oz)
¼ cup, whole milk
Streusel
1/3 cup, flour
1/3 cup, brown sugar
2 tbsp, which sugar
1 tsp, pumpkin pie spice
¼ cup, butter, melted
Directions
Preheat oven to 350 degrees. Grease a bread loaf pan.
Make the streusel
In a small bowl, combine the flour, brown sugar, sugar, and pumpkin pie spice. Melt the ¼ cup of butter and mix with the sugar and flour mixture. Refrigerate until bread is ready to bake.
Make the bread
In medium bowl, combine the dry ingredients – flour, baking soda, pumpkin pie spice, cinnamon, nutmeg and salt.
In a large bowl or stand mixer bowl, mix the eggs, white sugar, and brown sugar until combined. Add in the molasses, coconut oil, and vanilla. Mix until combined. Add in can of pumpkin and whole mix. Mix until combined.
Pour the dry ingredients into the wet ingredients. Mix until combined.
Pour batter into loaf pan. Crumble/spread the streusel over the top of the bread. Bake for an hour and 20 minutes.
