Fall Pork Chops with Apples

1 tablespoons olive oil

3 – 4oz. pork chops

Kosher salt and pepper

1 tablespoon butter

2 medium apples, cored and diced

1 small yellow onion, chopped

¾ cup low sodium chicken stock

1 sprig fresh sage, chopped

1 sprig fresh rosemary, chopped

1 tablespoon, fresh thyme leaves

Directions

Heat 1 tablespoon oil in a skillet over high heat.  Sprinkle salt and pepper on chops.  Add to pan and sear on one side 4 to 5 minutes.  Salt and pepper the top and then flip and sear on the other side an additional 4 to 5 minutes.  Remove from pan and set aside.  

Add butter to the pan and then add apples and onions.  Stir scraping bits from the bottom, until onions begin to caramelize, about 8 minutes.  Add stock and herbs and return pork chops to the pan.  Cook 10 to 15 minutes more or until liquid is reduced and pork chops are fully cooked. 

Pork chops are fully cooked when they reach an internal temperature of 145 degrees.

Serve topped with apple and onion mixture.
