Spinach and Cheese Ravioli with Roasted Red Pepper Sauce

Ingredients

2 packages Organic Rising Moon Spinach and Cheese Ravioli

1 jar roasted red peppers

1 tbsp roasted red pepper

1 tbsp olive oil

2 garlic cloves

1/4 cup onions, finely diced

1/2 tsp red pepper flakes

2 tsp white sugar

1/2 tsp salt

1/2 tsp pepper

3 tbsp whole milk

Parmesan cheese for garnish

Directions

Drain roasted red peppers. Add peppers to a blender and blend for 30 seconds - or until smooth.

In a medium saucepan, heat olive oil on medium. Add onions and cook for 1 minute. Add garlic and cook 30 seconds. Add in roasted red pepper sauce. Add sugar, red pepper, salt and pepper. Stir to combine. Add milk and stir to combine. Simmer for 5 minutes.

Cook ravioli according to package.

Garnish ravioli and sauce with freshly grated Parmesan cheese.
