Taco Salad with Local Spinach

Makes 4 salads

Ingredients

1 lb local Ferndale Market ground turkey or for a vegetarian version, sub your favorite beans

1 packet taco seasoning

10 cups of local spinach

1 yellow pepper, diced

1 red pepper, diced

½ Vidalia onion, diced

1 can of black olives, halved

1/2 carton of grape tomatoes, halved

2 avocados, diced

2-3 large handfuls of chips

½ cup shredded cheese

Cilantro for garnish

 Directions

Cook ground turkey with taco seasoning according to package.

In a large bowl, combine the greens, peppers, onions, olives, and grape tomatoes. Gently toss.

On 4 large plates, dress salad with remaining ingredients: avocado, chips, cheese, and cilantro.
