Vegan Broccoli Peanut Bowl with Crispy Tofu
Makes 2 to 4 bowls
Peanut Bowl Ingredients
1 cup long grain brown rice, cooked
1 batch crispy tofu (recipe below)
1 batch peanut sauce (recipe below)
2 cups broccoli florets, cut into bite sized pieces
2 carrots, peeled and cut into matchsticks
1 cup loosely packed spinach, chopped
4 sweet mini peppers, cut into match sticks
1 ripe avocado, cut into cubes
¼ cup cilantro, chopped
2 green onions, thinly sliced
¼ cup peanuts
Peanut Bowl Directions
Prep your veggies before you assemble the bowls. Scoop rice into the bottom of your bowls. In another small bowl toss broccoli in ¼ cup peanut sauce. Then divide among serving bowls. Next toss cooled tofu in ½ cup peanut sauce. Let sit while you prepare the rest of the bowls. Moving around the bowl arrange carrots, spinach, mini peppers, and avocado. Divide tofu and put on the top of each bowl. Garnish with cilantro, onions, and peanuts. Drizzle with remaining sauce.
Crispy Tofu Ingredients
1 -14 oz package of extra firm tofu
1 tablespoon low sodium tamari
1 tablespoon extra- virgin olive oil
1 teaspoon sesame oil
1 tablespoon cornstarch
Crispy Tofu Directions
Preheat oven to 400 degrees. Remove tofu from the package and drain. Cut tofu into thirds lengthwise so you have 3 even slabs. Stack the slabs on top of each other and cut 5 rows across and 4 rows lengthwise (makes 60 pieces).
Press moisture out of the pieces by placing them in between paper or flour sack towels and topping with a cookbook, cutting board, or other heavy object. Let sit for 10 minutes to a half hour (the more moisture you press out the crispier your tofu will be).
In a bowl combine tamari and oils. Add tofu to the bowl and toss gently to coat.
Place on baking sheet, then sprinkle with cornstarch. Using a rubber scraper, gently turn to coat with cornstarch.
Bake for 15 minutes. Remove form oven and turn each piece over. Bake for an additional 10 to 15 minutes. Remove from oven and let cool at least 10 minutes.
Peanut Sauce Ingredients
1/3 natural peanut butter
2 tablespoons maple syrup
¼ cup warm water
¼ cup low sodium tamari
1 clove garlic, minced
Juice from one lime
1 teaspoon hot sauce
2 tablespoons mild flavored oil
Peanut Sauce Directions
Mix peanut butter, syrup, and water until smooth. Then add garlic, lime, and hot sauce and stir until well combined. Add oil in a single stream while stirring to incorporate.
