White Bean and Avocado Toast
Ingredients
1 can of Field Day Canellinni Beans
1/2 small red onion, thinly sliced
½ pint of grape tomatoes, halved
2 avocados, diced
juice of 1/2 lemon
2 tbsp olive oil
1 1/2 tsp of salt
1 tsp of pepper
2 tbsp fresh parsley
Pinch of cayenne pepper

Directions
Preheat oven to 400 degrees. Butter 6 slices of bread and sprinkle with garlic salt. When oven is preheated, bake for about 10 minutes. Watch closely so toast doesn’t burn.
Meanwhile, thinly slice red onions, halve grape tomatoes and dice the avocados. Drain beans. Gently combine beans, red onion, grape tomatoes, and avocado. Add juice of 1/2 lemon, olive oil, salt, pepper, fresh parsley and cayenne pepper. Toss gently to combine.
