Green Beans and Almonds

Ingredients

3 teaspoons dark toasted sesame oil, divided

2 # fresh green beans, trimmed and washed

½ cup slivered almonds

2 tablespoons Tamari or low sodium soy sauce

4 tablespoons rice wine vinegar

2 cloves garlic, minced

2 teaspoons fresh ginger, grated

2 teaspoons dark brown sugar

Directions

Combine Tamari, rice wine vinegar, garlic, ginger, 1 teaspoon sesame oil and brown sugar in a bowl and stir until well mixed. Set aside. 

In a flat-bottomed skillet with high sides, heat 2 teaspoons oil until water flicked on top sizzles. Add green beans and sauté uncovered for 2 minutes, then add slivered almonds and continue to sauté for 3 to 5 minutes more or until almonds are fragrant and begin to brown. 

Add the dressing to the pan and immediately cover, to steam 1 to 2 minutes or until sauce is mostly evaporated shaking the pan occasionally to prevent sticking.

Pour into a bowl, scraping the bottom and sides of the pan.
