Chicken Fajitas

Makes 6 fajitas

Ingredients

3 tablespoons fajita seasoning (see below)

2 tablespoons lime juice

 2 tablespoons olive oil, plus 1 teaspoon

1.25 lbs. chicken breast, cut into strips

1 large green pepper, sliced

1 large sweet onion, sliced

1 cup cherry tomatoes, halved

6 flour tortillas

Directions

Mix fajita seasoning, lime juice and 2 tablespoons olive oil together to make a paste.  Add chicken breast and marinate for at least 20 minutes. 

Heat oil in a cast iron pan over high heat until it sizzles when water is flicked on it. Add chicken spread out in a single layer. Cook for 5 minutes then flip chicken over. Cook for another 5 minutes. Move chicken to one half of the pan. 

Add remaining oil to the empty half of the pan. Add onions and peppers. Cook for 2 to 3 minutes, then flip. Cook for three more minutes.

Mix meat and peppers and onions together, scraping the bits from the bottom of the pan. 

Add tomatoes and cook for 2 to 3 more minutes.

Meanwhile heat tortillas.

Serve in tortillas with sour cream and avocado salad.

 

Fajita Seasoning

2 tablespoons chili powder

1 tablespoon salt

1 tablespoon smoked paprika

1 tablespoon cumin

1 tablespoon sugar

½ tablespoon onion powder

½ tablespoon garlic powder

¼ teaspoon cayenne pepper

Mix ingredients together. Store in an airtight container for up to 3 months.
