Caprese Appetizers with Balsamic Reduction

We love this take on the traditional Caprese Salad. Super simple to throw together in a pinch and just as delicious. We use whole mozzarella as it provides a stable base, but you can certainly use fresh mozzarella balls as well. You can buy premade balsamic glaze or use an aged balsamic vinegar which tends to be a bit thicker and richer in flavor or if all you have is regular Balsamic Vinegar you can make a quick reduction.

Ingredients

Cherry Tomatoes, any variety (1 for each appetizer)

Whole milk mozzarella sliced in 1-inch squares (1 for each appetizer)

Fresh basil leaves, washed and dried (1 for each appetizer)

Toothpicks

Balsamic Glaze, Aged Balsamic Vinegar or 1 cup Balsamic Vinegar for reduction

Directions

Assemble as follows. Cheese, basil leaf, tomato on a toothpick. Put Balsamic Glaze, Aged Balsamic Vinegar, or Vinegar Reduction in drops on a plate before placing the appetizers.

Balsamic Reduction

1 cup Balsamic Vinegar

Put in saucepan and heat over medium heat stirring occasionally until the desired thickness is reached (about 10 minutes). Let cool before using.
