Deconstructed Peanut Spring Rolls

Ingredients

2 cups red cabbage, shredded

2 cups green cabbage, shredded

2 green onions, thinly sliced (whites and a bit of the greens)

1 jalapeno pepper, seeded, ribs removed then minced

1 tsp toasted sesame oil

1 tsp lime juice

2 carrots, julienned

1 medium cucumber, peeled and seeded, diced into small pieces

2 cups fresh cilantro, rough chopped

1 cup fresh mint, minced

½ cup peanuts

Directions

Combine cabbages, green onions, and jalapeno pepper in a bowl. Toss with sesame oil and lime juice.

Mound cabbage mix on a single serving plate or bowl.

Pile carrots, cucumbers, and fresh herbs around the edges.

Drizzle (generously) with Thai Peanut Sauce (recipe below) and top with peanuts.


Peanut Sauce

1/3 cup smooth natural peanut butter

2 tablespoons rice vinegar

2 tablespoons lime juice

2 tablespoons tamari

2 tablespoons honey

1 teaspoon toasted sesame oil

2 cloves of garlic, minced

A dash of hot pepper sauce

Combine ingredients and whisk together until smooth.
